3. Meatloaf 1lb. of ground beef 1/4 cup your fav breadcrumbs 1/4 cup of diced onion and garlic 1 egg maybe 1 cup of your own spaghetti sauce Mix all the stuff except spaghetti sauce and make it into a loaf. Bake at 350 for 40ish minutes, then drain the grease, then put your sauce over the loaf and bake for another 15ish minutes.

Christina, I've never put spaghetti sauce on meatloaf before, that sounds yummy.

Yeah I like it so much better than cream of mushroom or BBQ sauce or ketchup.

5. Stuffed Bell Peppers I usually use leftovers from a spaghetti night and a brown rice on the side night. I don't measure any quantities. I just mix it to the appropriate consistancy and go for it. Ground Beef Brown Rice Spaghetti Sauce Bell Peppers Cheese of choice (optional) Brown ground beef and cook rice per package directions. Preheat oven (about 400.) Cut tops off peppers and clean out seeds and membranes. Place in a corningware dish in 1" of water and microwave about 5-10 minutes (5 for 2 peppers and 10 for 4-5 peppers.) Mix together sauce, rice, beef, and cheese and stuff peppers (dump any interior water out) with mixture and place back in the corningware dish with the water. Bake uncovered (about 30 minutes- since everything is done it just needs to heat thoroughly) The cheese you use really changes the flavor. If I want an italian flavor, I use moz, parm, or no cheese. If I want a cheese burgery flavor, I use sharp cheddar. 6. Beef Stroganoff My grandmother never used a nice cut of meat for hers. Hers was always ground beef!

Shepherd's Pie 1 lb ground beef Chopped onion (to taste) 1 can cream of mushroom soup 1 can cream of celery soup 1 can of your favorite veggies - do not drain 1 can of (chopped) stewed tomatoes - do not drain Salt* and pepper to taste Leftover mashed potatoes or instant mashed potatoes. (Enough to generously cover top). Preheat oven to 350-400. Spray casserole pan. Brown ground beef and onion. Mix all ingredients, except mashed potatoes together. Spread evenly over bottom of casserole pan. Cover mixture evenly with a generous topping of mashed potatoes. Bake for approx. 1 hour. *I use garlic instead of salt because I'm on a low-sodium diet.

Kimmie, our meatloaf has tomato soup in it, and then there's a sauce with tomato soup, water, brown sugar, mustard that you cook it in, it's good too. I've never tried the pasta sauce with it before

my mom used to make her version of a "hamburger helper" meal.....ground hamburger meat, noodles (she used elbow macaroni noodles, I use whatever I have), and a large can of tomato soup. (and some salt, pepper and garlic powder to taste)

I was going to suggest sloppy joes, but I can't find my recipe! It takes about 2+ hours to fix from scratch and avoid unhealthy ingredients (such as most bottled BBQ sauces or ketsups that have HFCS,) but is well worth it b/c you can make a huge batch and freeze it into smaller portions for your family. It doesn't take long to thaw it and reheat for an effortless dinner, so the 2 hours is a good investment of time. There are loads of recipes online with differing ingredients & shorter cook times if you wanted to search and find a recipe you are comfy trying... and I'll keep my eye out for my recipe.

That sounds good, I remember a recipe my Mom made that had "sloppy joe" under cornbread, but I have never made it, does anyone know of that one?

I found the Sloppy Joe Recipe!! It does have Ketchup in it (which I'd forgotten,) but there are some more healthy versions that don't have HFCS or you can make it yourself.
