I love Chinese, but I've never had much success making it. Does anyone have great recipes? I'd love to have a recipe for Thai Dynamite like Pei Wei (Asian Resturant) makes. Post away :-).

If you buy frozen stir-fry vegetables, often there will be a basic stir-fry recipe on the package. I've tried those and they're easy and pretty good. Other than that, I usually buy Chinese food at Chinese restaurants rather than make my own.

I have a great recipe for Peking Pork (at my local restaurant, they call it Cantonese pork)
I will try to remember to post it later.
I also have a recipe for baked egg rolls...not quite the same as the real thing, but still pretty good.

They are supposed to be priced lower than PF Changs. The prices look typical for a chinese restaurant

There are chain Chinese restaurants????? I've never heard of them before! Around here all the Chinese restaurants are individually owned and operated. I have 3 within walking distance of my home, so which one I go to depends on what I want to eat.

same here, but they all get their stuff from the same distributor, so it tastes the same.
well, pretty much anyways.

panda express and pf changs and pei wei are the only national chinese chain I know of.. panda express is usually in food courts at the mall.

Sweet & Sour Pork- I've made this recipe since high school. I only add half the vinegar when making the sauce, though. It's too sour for my taste.
I like to marinate chicken in this chili sauce and serve with "chinese" sides. That may be a pepper and onion stirfry, brown rice, pea pods, sugar snap peas, grilled zuchini (marinated in the same sauce,) whole grain soba noodles, grilled pineapple, etc.

Chinese food is actually one of the easiest genres to make. Ingredients are easily found - most all stores have an "Asian" aisle, now. Egg roll - or spring roll - wrappers are usually found in the produce section. So much better than the sodium and fat laden stuff you get at the average take out place.
I don't have any particular recipes, I tend to cook a lot more Thai/Indian style, but I'd say just think of something, and give it a try.
Stir fry is the easiest. Use a good rice, chop up some fresh vegetables and toss together with some soy sauce or tamari. Add in whatever meat and vegetables you want.
Saute some cabbage, onions, carrots and minced shrimp, wrap into a roll, fry, voila.
I'd also visit any Asian grocery stores you have around. There'll be lots of inspiration in there.
Egg drop soup is really easy, once you get your stock boiling, you just swirl in some egg white. It cooks instantly. Add some scallions, tofu, broccoli, etc.
