Hey folks,

I left my cake pans at my mom's but I want to make a cake for my hubby for Father's Day. I have a loaf pan...9x5inches I think. Should I use brownie mix, muffin mix or cake mix? I don't really do well from scratch, so I buy the mixes that come in a box.

About how long do you think I should bake it and what temp? Thanks!

I say either muffin or cake. BUT you'll only need half the mix, if even that much!

Cake mixes can be baked in bundt pans, so it should work in a loaf pan.

What I'd do is measure out the mix and only use half of it. Use half the other ingredients as well. Bake at the temp directed on the box and just kinda watch it for doneness - use the toothpick method.

Oh man, it was a good thing Tricia told me to use half the mix because my cake was so close to overflowing! LOL! It's delicious! It was lemon cake with lemon frosting and added a little coconut to the cake mix. Came out so good. I don't remember how long it took though, I just kept jiggling it and poking it with a toothpick. I always get so nervous when I don't have exact directions though because I'm not very intuitive with timing and temp. I have half the mix left, so when we run out I'm definetely gonna make some more.
