Anyone out there with a yummy pumpkin roll recipe?? I had one before the fire but the person that gave it to me wont share it with me again--so if you wouldnt mind sharing I would appreciate it!!

Why won't they share it with you? Weird...

I don't have a really good recipe...not totally happy with mine so I won't waste my time typing it out. I can't wait to see some of the recipes though.

Charity, I'll post mine when I get home from work and piano lessons. I think it is odd that they gave it to you once but now they won't give it to you again.

They wont share because in the past I would sell pumpkin rolls at Thanksgiving and this person would help me and I would pay them--well this time I will be making them all(they dont even know I have orders) I just have a few people who know I sell baking and want them--so I wanted to just make the few not having to pay someone--it is sad because they are very old friends of min and we help them all the time--but it is okay--I remember enought that if I see some recipes I will know what to do and which one will work---and by the way--all of you that sent recipes after our fire I use them and have a fond remembrence of each of you!! I made a chicken recipe the other day from someone here!!

Charity, I have not forgotten you! I went to my recipe box and the recipe is not there. I am searching as I have time. If I locate it I will post it ASAP.

3/4 cup all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon salt
3 large eggs.
1 cup granulated sugar
2/3 cup mashed pumpkin

Filling __

8 ounces cream cheese - softened
1 cup sifted powdered sugar
6 tablespoons butter - softened
1 teaspoon vanilla extract
any amount of powdered sugar

Preheat oven to 375 F. Grease 15 x 10 inch jelly roll pan, line with wax paper. Grease and flour paper. Sprinkle towel with powdered sugar.

Combine flour, baking powder, soda, cinnamon, cloves and salt in small bowl. Beat eggs and sugar in large bowl until thick. Beat in pumpkin, stir in flour mixture and spread evenly into pan.

Bake for 13 - 15 minutes or until top of cake springs back when touched. Immediately loosen and turn cake onto prepared towel. Carefully peel off paper. Roll up cake and towel together, starting with narrow end. Cool on wire rack.

Beat cream cheese, powdered sugar, butter and vanilla in a small mixer bowl until smooth. Carefully unroll cake, remove towel. Spread cream cheese over cake and reroll.

Wrap in plastic wrap and refrigerate at least one hour. Sprinkle with powdered sugar before serving.

I love pumpkin rolls. The recipe cuddles posted looks pretty much like the one I have. I found that Wal Mart carries them in their bakery and I will pick one up every so often. I don't think they are as good as the ones I make but good enough when I don't feel like making one.
