How about Moses. God had Moses lead the people of Israel out of Egypt and into the wilderness (desert). The trip to the promised land would have only taken a little while but because they were disobedient, it took 40 years.
You can read about it in Exodus. Thats the second book of the old testament.

John the Baptist was a voice crying in the wilderness, and lived a very rough life. He bapitized Jesus. You can read about him in John, in the new testament.

A lamb was (in Old Testament times) the main form of sin offering, and Christ died as the perfect once for all sacrifice for our sins (as prophesied in Isaiah among other places).

But He was pierced through for our transgressions, He was crushed for our iniquities; The chastening for our well-being fell upon Him, And by His scourging we are healed. All of us like sheep have gone astray, Each of us has turned to his own way; But the LORD has caused the iniquity of us all To fall on Him. He was oppressed and He was afflicted, Yet He did not open His mouth; Like a lamb that is led to slaughter, And like a sheep that is silent before its shearers, So He did not open His mouth. By oppression and judgment He was taken away; And as for His generation, who considered That He was cut off out of the land of the living For the transgression of my people, to whom the stroke was due? His grave was assigned with wicked men, Yet He was with a rich man in His death, Because He had done no violence, Nor was there any deceit in His mouth. (Isaiah 53:5-9)

Hence He was (as John the Baptizer proclaimed Him to be "The Lamb of God that takes away the sins of the world."

This was reinforced many times in the New Testament, but almost verbatim in 1st Peter:

For you have been called for this purpose, since Christ also suffered for you, leaving you an example for you to follow in His steps, WHO COMMITTED NO SIN, NOR WAS ANY DECEIT FOUND IN HIS MOUTH; and while being reviled, He did not revile in return; while suffering, He uttered no threats, but kept entrusting Himself to Him who judges righteously; and He Himself bore our sins in His body on the cross, so that we might die to sin and live to righteousness; for by His wounds you were healed. (1 Peter 2:21-24)

And it was a used to lead others to Christ:

Philip ran up and heard him reading Isaiah the prophet, and said, "Do you understand what you are reading?" And he said, "Well, how could I, unless someone guides me?" And he invited Philip to come up and sit with him. Now the passage of Scripture which he was reading was this: "HE WAS LED AS A SHEEP TO SLAUGHTER; AND AS A LAMB BEFORE ITS SHEARER IS SILENT, SO HE DOES NOT OPEN HIS MOUTH. "IN HUMILIATION HIS JUDGMENT WAS TAKEN AWAY; WHO WILL RELATE HIS GENERATION? FOR HIS LIFE IS REMOVED FROM THE EARTH." The eunuch answered Philip and said, "Please tell me, of whom does the prophet say this? Of himself or of someone else?" Then Philip opened his mouth, and beginning from this Scripture he preached Jesus to him. (Acts 8:30-35)

So Jesus is frequently referred to/symbolized as a lamb in recognition of His great sacrifice which made possible our Salvation.

Tim

Note: all below (NASB version) unless specified.

Ex 12:11,21,27
11 'Now you shall eat it in this manner: with your loins girded, your sandals on your feet, and your staff in your hand; and you shall eat it in haste --it is the LORD'S Passover.
21 Then Moses called for all the elders of Israel and said to them, "Go and take for yourselves lambs according to your families, and slay the Passover lamb.
27 you shall say, 'It is a Passover sacrifice to the LORD who passed over the houses of the sons of Israel in Egypt when He smote the Egyptians, but spared our homes.' " And the people bowed low and worshiped.

This/\ is where it began, this is where it ended\/

Mt 26:2 "You know that after two days the Passover is coming, and the Son of Man is to be handed over for crucifixion."
Heb 9:26 (The Message)
if that had been the case, he would have to sacrifice himself repeatedly throughout the course of history. But instead he sacrificed himself once and for all, summing up all the other sacrifices in this sacrifice of himself, the final solution of sin.

Paul is another one. He spent three years in the desert being taught by the Holy Spirit.

I would go even farther back for where it began to Abraham and Isaac on their way to Mount Mariah:

Abraham said, "God will provide for Himself the lamb for the burnt offering, my son." So the two of them walked on together. (Genesis 22:8)

But we are agreed where it ended...with our Salvation because of Christs Sacrifice.

Jesus Christ of Nazareth was led into the wilderness by the Holy Spirit to be tempted by the devil after 40 days of fasting.

After He won the victory over the enemy in the wilderness, He returned in the ~power of the Holy Spirit~ to Nazareth to proclaim:

The Spirit of the Lord is upon me, because he hath anointed me to preach the gospel to the poor; he hath sent me to heal the brokenhearted, to preach deliverance to the captives, and recovering of sight to the blind, to set at liberty them that are bruised,
To preach the acceptable year of the Lord.

Luke 4:18-19

There is several references in the bible why Jesus is the lamb:
When Adam and Eve was in the garden and sinned God dressed them in Lam skin. (this was the first start) Then their son Abel sacrificed a lamb to represent the spiritual as Cain gave fruit from the earth which represents the wordly ways.
David a man after God's own heart was nonetheless a Sheperd of sheep.
(We are Jesus sheep)

The only thing that *SAVED* the Israelites was the blood of the lamb during their slavery in Egypt in which the Lord *passed* over them. Hence the passover celebration.
God was showing that our sinful nature needed atonement, so everything in the O.T. leads to our perfect, unblemished lamb to die for us, known as John the Baptist stated the Lamb of God, who takes away the sins of the *world.* ( you can also reference John 3:16)
It is His perfect, sinless blood that saves us from our sins, so we can live in Christ. (See Galatians 2:20 which states. We are crucified with Christ, yet I live, not I but Christ who lives with in me.)
He died so we can live, yet He lives through us.

Hope this helps

Yes before Jesus, there was Moses and the Israelites as someone has already stated. Also John the Baptist was in the wilderness before he started his ministry to make the way for Christ.
The only one after Jesus death and resurrection would be Paul as stated in the books of Acts after his journey to Damascus
