Hi, my name is Jeanne. My screen name is shine-girl .

We'll talk about food, cooking, tips, hints. Even news topics at times. But having fun is important. Recipes will be in blue for ease If I get a revelation along the way ,that I would like to share you'll see it here first. Let's get going.

Here's a recipe I am baking now, I wish you could smell this! This really is a comfort food.( If you like sweets.) Hope you like it.

24 Karat Cake
3 C sifted flour
2 tsp baking powder
1 tsp. soda
1/2 tsp salt
2 tsp cinnamon
1 1/2 c. salad oil
2 c. sugar
3 eggs
1 tsp vanilla
1 large can crushed pineapple drained
1/2 cup chopped pecans
2 c. grated carrots

Sift dry ingredients together.
Cream salad oil and sugar.
Beat in eggs, one at a time and add vanilla.
Blend in dry ingredients at low speed.
Fold in pineapple. pecans. and grated carrots.
Bake in greased, floured tube pan,
pour orange sauce over it and let set over night

Orange Sauce
1 can frozen orange concentrate
1 c sugar
combine the two and bring to boil

next day:
turn cake out on plate and glaze with
1 cup powdered sugar
and 1 Tblspoon water
let drip down sides of cake.


There are lots of Recipes to share , so keep checking back. Being here in the south , I have lots of tried and true recipes to pass along. I plan on adding weekly.

Here is one from my Grandmother. I pass this one along as a Christmas present to
those who visit this page. Merry Christmas . And Happy Holidays!

Chocolate Sheet Cake

sift together:
2 cups flour
2 cups sugar
1/2 teaspoon salt

In sauce pan, boil and pour over flour mixture and mix well:
1 stick butter
1 cup water
1/2 cup butter
3 tablespoons Coco


next:

Beat 2 eggs
1 tsp soda
1/2 cup butter milk *
1 tsp vanilla

stir well mix together with other mixture and Bake in a greased floured pan. ( A roasting pan which is larger than a regular cake pan) this cake comes out kind of thin. Which is the the way it should be. 350 degrees 25-30 minutes


* you can substitue 1/2 cup milk and 1 tablespoon lemon concentrate to make buttermilk


Icing


In a pan melt but do not boil:

1 stick butter
3 tablespoons coca



add:
1 box powdered sugar
1 tsp. vanilla
1/2 cups chopped nuts
6 tablespoons milk


stir well and ice cake while hot.




Here is a short story about my husband. My father made the best pralines around. and naturally, my husband wanted to learn how to make them.
So, my Dad gave him all of the ingredients and my Hubby wrote them down. He made the pralines but they did not come out right . The problem was this:
My hubby used 3 cups of corn syrup. My dad claims he told him the correct amount which is 3 tablespoons of syrup. My hubby claims he told him 3 cups,and this he did deliberately. My dad thought this was so funny. They laughed about this often when ever the subject of Pralines would come up. We miss dad now , He is with Jesus. But I am glad that my Hubby finally got the praline receipe right. It is not easy to make but if any one wants the receipe I will put it on here. Of course when we eat them we think of Daddy who always made them for Christmas.

I finally had a revelation.
If I wear really high heels with my jeans I look thinner. This really works! Try it!

This recipe comes from no ordinary person...
She is 56 years of age and is 1 of 13 children. She has 10 Grandchildren. She rides a motorcycle. This lady would do anything to help anyone and is always helping others out.
She has spent the last 5 years of her life organizing care for an alzheimer’s patient.Not receiving any financial reimbursement for herself. The patient is a lady in her 80's the patient always makes everyone she meets feel good by telling them how beautiful that each and every person is she says it each time someone enters the room. She is dear to the care giver.
The care giver of whom I speak is my mother in law! This, is her recipe.


She cooks this for nearly every occasion.



Saucy Peanut Butter Cookies

1 cup karo syrup
1 ½ cups peanut butter
1 cup sugar
6 cups corn flakes (plain)

Boil Karo and Sugar 1 minutes
remove from heat and add: peanut butter and flakes
Drop by spoonfuls onto buttered surface and let cool.

This is very easy and tastes good too.

Here's another easy, fast, but really delicious receipe. This has become one of my favorites as of late.
It came from the Betty Crocker cookbook. In my own words:

Buttery Snack Cake with Broiled Topping

Mix the following together, by hand will do:

1 1/4 cup all purpose flour
1 cup sugar
1/3 cup butter
3/4 milk
1 1/2 teaspoon baking powder
1 teaspoon vanilla
1/2 teaspoon salt
1 large egg

Heat oven to 350 degrees. grease 9X9 in square pan.

bake 35 minutes or until toothpick comes out clean.



while warm frost with ,

Broiled Coconut Frosting

Mix:
1 Cup flaked coconut
1/3 cup packed brown sugar
1/4 cup butter
2 tablespoons milk

Pour this mixture over hot cake and
BROIL.

Broil about 4 inches from heat until light brown.

I like to eat it while warm. (careful though it is very hot when it comes out.)
mmmmmmmmmmmmmm!!!!

If your looking for something to do with those left over dates from your fruit cake.
You could try this Recipe. I have been snacking on these and really enjoy them with coffee.

Date-Nut Bars

1/2 Cup all purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
2 eggs
1 cup granulated sugar (I substituted brown sugar, because I really like it and buy my brown sugar from a sugar mill)
1 8 oz package pitted dates finely chopped
1 Cup coarsley chopped walnuts
Confectioners' sugar

Preheat oven to 350 degrees and grease a 13 x 9 inch pan
sift dry ingredients together.
beat eggs and add sugar
gradually add flour and egg mixture then add dates and nuts.

bake 25-30 minutes until golden brown.
cut into 30 bars.

The origianl receipe says to roll in sugar berfore serving. (optional)

It is very rewarding and tastes better than something made from a box.(almost all of the time.)
I think baking is like a hobbie. The more you bake the easier it gets, and your friends and family
will appreciate your new found hobbie.

Here is one anyone can make. Put all the following ingredients in a bowl and stir. The End.
I call them Walters crackers. You can make these in like 3 minutes.
So If company stops by have the ingredients on hand
and youll have a fun snack.

Walters Crackers

1 Cup oil ( I tried reducing this and It just did not taste as good. I don't think you should go below 3/4 cup oil)
2 Tbls Dillweed ( dried seasoning)
2 Tbls Lemon Pepper
1 Box oyster crackers

Those of you who try these I so hope you enjoy them.

Happy New Year.

Today on the menu is "learning to make a roux". I will teach you how to make a roux. And then in a few days I will give you
the receipe for Gumbo. Gumbo is a soup made with chicken or seafood, Your choice.
Gumbo is a really good meal adored by those living in Louisiana, Served with rice.

Roux:

1/4 cup veg oil
1/4 all purpose flour


Heat up the oil over medium heat in a heavy cast iron skillet. add the flour STIRRING CONSTANTLY! (very important that)
Until the roux is light brown. The color should resemble a dull copper penny and then it is finished. Immediately remove from heat
and take it out of pan to cool. OR it will continue to cook.
You may keep this in the refridgerator indefinately.

So, that does not sound so hard, does it?

A cajun will alway tell you . "First you make a roux"

Now are you looking forward to the Gumbo? Its perfect for tailgateing. If you have the equipment.
My Uncles make an enormous Seafood gumbo every christmas.
To delicious to describe.
Simply the best.
This year we ate it on the 23rd of December.
Maybe by next year you'll be making the Gumbo with left over trukey .

I am very happy to share this with you. You don't know what a treasure it is to us here.


I believe our New Year will be better than the last. And that we will continue to grow closer to Jesus . All year long. Becoming stronger christians.
