Sugar is carbs. (1tsp=4g.)

It's not so much that it's a low-carb diet as it is a carb-counted diet. The goal is not to have as few carbs as possible, but rather to have an exact amount of carbs to keep the blood sugar regulated.

While that means eating a lot fewer carbs than before, certainly it has been an effort to get enough carbs at times.

I do avoid high glycemic index foods, such as sugar and other sweets. One reason is the emptiness of the carbs, meaning that there just isn't much other nutritional value to the foods. It doesn't fill you up, and then your carb-count is used up. That's not a fun place to be.

The lower glycemic index foods help you feel more satiated for a longer period of time. Also they tend not to spike the blood sugar readings. If you're looking for low-glycemic foods, the best place to start is by throwing out your Wonder bread and either bake or buy some real bread. We have a bread machine. The bread that we buy at the store is a 12-grain variety that has 6 grams of fiber per slice. The fiber content is an excellent gauge of glycemic index in breads.

Yup. You know, as much as I learned all this stuff before, you just forget when you just start to love everything. Call it selective memory? But I gotta get out of my tomato phase a little and get to cooking with lower g foods. Tomato is good for you but too much is too much sugar.

Of course I have to get through Thanksgiving first. lol This is my first turkey so I hope I don't screw it up.

The south beach diet is only about 7.00 in paperback. Its a quick read and give you some idea of low gi foods.

Counting carbs makes my head hurt, that's why i started running. LOL

When I lost 30 pounds I counted calories. It was a lot of work but it taught me well. I pretty much know how much calories I would have in a day. All I really need to do is get me a good list of low g food, incorporate it in my diet and work hard to eat little meals throughout the day. I don't think I need to go back to counting calories. :)

The first week or two of counting carbs was not easy. It definitely takes some getting used to. After a while you start to know what and how much you can eat and what their carb count is worth.

My wife...God bless her....math is not one of her best subjects, but she keeps after me and makes sure that I eat right and I help her with the math sometimes. It has been a blessing for me to have someone so dedicated to making the diet work and keeping the diabetes under control.

No insulin is a good thing.

Well, the playground evaluation project that I wanted to wok on is being moved till Tuesday. I fotgot my measuring tape and the busses where off scedule.

School has been busy, busy, busy. This semester has gone by quicker then usual I have had to play catch-up.

Since or Thanksgiving was small we are going to save the Turkey for Christmas. Instead we had beef I did a little cooking but my aunt did the most of the cooking.

I'm thinking of making beef for Hannukah/Christmas. It will be my first roast. lol. Yes, I have never cooked a roast before. I want to find a really good recipe and make a really great sauce for it. One that makes you close your eyes when you take that first bite and say, "MMMMMMmmmm". lol

*SIGH*

So as you all know or may not know I am doing my Practicum for my Early Childhood Education Degree. Instead of a final we have to take over the class room for a day. It can be a morning and afternoon, two mornings, two afternoons....It is best not to do a full day all at once because that can be really stressful.

The semester will be ending next week and I only go in two days Monday and Thursday. We have to write a really detailed schedule that includes everything just so we have everything covered.


So today was my first day. And it not go very well. My nerves got the best of me so my timing was totally off. I got stressed and I could not remember what I was supposed to do. I stated diapering late, and I had difficulty delegating tasks. I knew what I had to do but I tried to do it by memory instead of having my clipboard to guide me. I had to be told things that I should know.

To top it off I think I am coming down with a cold. So I was my seizure medication and my sinus medication which can make me kinda foggy. I am taking this class for the second time. And it is taking me longer to graduate instead of two years I will be gradauting in four. Which also probably made me doubt that this is what I am supposed to do with my life.

So, on Thursday I will try and do it again.

i'm sorry saraimay ... will be praying for thursday ... i've had people tell me that seizure medication can be quite powerful and definately affect memory ... the clipboard seems like a good idea ...

Plus I understand how nerve wracking it can be for your first time. Just take a deep breath, rest as much as you possibly can today and start all over. When you have your clipboard, be sure to keep it simple and in list form, possibly checking off the tasks once you complete them and writing a side note of when you need to delegate tasks.

I've worked in day care before, although the curriculum was looser.

I know how great you are with kids Sarah and you would make a wonderful teacher! Will be praying for you this Thursday!

My second day went okay it could have gone better.Since it was Thursday which was a RAINY DAY any body who did not need to come in to school did not. Sometime a smaller group is more difficult. Especially when it a certain combination of children. I love all the children in my class but some
of them can be kinda moody.

My my Mentor teacher says I need to practice seeing the whole picture. I tend to only consentrate ((sp?) of the classroom/yard at once. My Mentor says this come very easily to people while others need practice. She is
suggesting me for an a teaching asisstiant (sp?) position. I agree with this.

I also need to relate to parent better open up to them more. A couple of parents have 'complained' about me.

-One of them is a father who is is very sensitive about his daughter. He thinks I crowd his daughter from time to time. He tends to spend a lot of time in the room observing everything and everyone.

-The second is from a mother who has two sons in the school and also works as an aide. I am unclear to what she was complaining about.

All of that being said, I have finished my 225 hours that are needed. And I will probably only go in on Monday to pick-up my water bottle which I left there on Friday and meet with my teacher.

The rain and the Honolulu Marathon has caused me to stay home. I did not feel like sitting on the bus, in traffic, on a rainy day. So, instead My mother and I will go and visit my grandmother. Hopefully by then there will be less runners on the road or we can avoid the runners route. The bus I take follows the runners route some. Then there is the rain. People here in Hawaii do not know how to drive in the rain.
