People always ask me when I tell them I am doing a low carb diet whether I am doing Atkins or South Beach. I have read both books and got some ideas from them, but I generally just do my own thing and it seems to work for me. My typical days goes like this: I usually have bacon or sausage and eggs for breakfast, sometimes with some cottage cheese. Lunch is meat of some sort with a vegetable (no carrots or potatoes). For example, one day this week I had vienna sausages and broccoli and cheese. Another time I had grilled salmon and steamed asparagus. Yesterday I splurged and went to Smokey Mo's with a friend and had some brisket and turkey (no sauce) with green beans and pintos. I have 15 almonds as a snack in the afternoon and if I am hungry before I get off work, I'll grab a piece of low-fat colby jack cheese. Dinner is when I get to have fun and eat my carbs. I still live with my parents so dinner is usually whatever Mom cooks unless she doesn't. Mom is from Louisiana and thinks that everything should be rice with gravy, meat, and beans. Although, she does sometimes substitue pasta or potatoes for the rice. last night was spaghetti with whole grain noodles and a salad. Thursday was dirty rice and the night before that was sausage, red beans and rice and a biscuit. The trick is to eat a small portion of the carbs and try to balance it out with fiber. I always drink a glass of milk with supper, but the rest of the day I just drink water. I stay away from caffein and sugar. I can do splenda, but I don't really care for the taste and it tends to make me want sweets which I can't have. In addition to the diet, I am also jogging for 30 mins a day. Once I get my weight down to where I want it to be, then I can start adding small portions of carbs in the form of sweet potatoes, brown rice, whole grain bread, whole grain pasta, and minimally whole fruit. I also take a multi-vitamin a day for women to help with whatever I might have missed.
