Oh I LOVE to cook too! Though I usually get the gumption and desire about 2pm and by the time I get off at 5....Taco Bell sounds much better! Luckily we love casseroles and such, so once I organize and clear out my freezer a bit to where I can get more in there, I plan to fill 'er up! I also plan on canning some soup mixes and stuff this summer (though we'll see how much canning a 6-8 month, working full time, pregnant lady gets done! Maybe the nesting will kick in for my advantage!

I just had a great idea. I am going to get my friend, who also loves to cook, and see if she wants to do a once a month cooking party. I'm sure she could use some easy meals because she is a full time working mommy and her hubby is currently deployed so she's own her own with a 3 year old. And it be a fun day for us both.

I'd like to, but have no idea how to freeze or reheat a meal. It seems like casseroles get mushy and meat gets a funny taste. I'd love to have lasagna in there, and a few other ideas. I don't think I wrap things well or have the right type of containers.

I usually make two meatloafs at the same time, and line both loaf pans with foil, then pull one out and wrap again and put in a freezer bag - at least that works for me.

My thought was just casseroles, but the once a month cooking site has other recipes too and has instructions.

Just took a look at the Once a Month cooking site and I must say... I'm intrugued. My concern would be how to arrange my budget to afford to by all the groceries at once. Any ideas there?

SAHMer sneaking in! I find baked ziti freezes/reheats much better then regular lasagna. At least my recipe does better than the one time I tried lasagna. Ok, going to lurk again!

Tonight, my sister and I decided to start on a smaller scale for budgeting reasons, as well as we want to make sure that we don't attempt too large a project first time out of the gate. We are going to try doing meals for one to two weeks at a time.

Krislynx, no need to lurk! You are more than welcome here, too.
I am curious: What makes the difference in baked ziti and lasagna that is frozen?

I have frozen meat and veggie lasagnas with good results. I haven't tried baked ziti.

Do you undercook the pasta? I do, if I know it is for a later time, as moisture will seep into the pasta as it freezes and thaws... and I hate flabby pasta.

I hate getting flabby from eating too much pasta.

I will put 2 chickens in the crock pot and make several meals from that. I have froze one chicken's breast to use later. I mention that because it is the idea of spending a whole day cooking that gets me - mainly because I don't have a whole day available, at any time...

I think starting with a two week cooking day sounds like a great plan. When I talked to my mom about it last night, she sounded pretty excited too.

We're also talking about getting someone to come to the house and clean the floors, bathrooms and scrub the kitchen for us once every other week or so. It sure would take a lot of stress off of both of us to know we didn't have to fit all that scrubbing into our schedules.

I planning on trying this with a friend that way we can kind of share expenses. Since there are just two of us, and just her and her three year old, we neither one need huge meals. I dont think I'd do it to where I had 30 meals, just pick and choose the things I liked. I plan on trying a few after the next grocery store visit. I love cooking but I am finding that at the end of a work day I am too tired to enjoy it. I usually cook a ton on the weekends, so this would work for me I think.

Erin, I do a lot of cooking on the weekends right now too. At least that is when I do casseroles or chilis and most of our meats. Then I just have to get some veggies together most days. If you ever want to try out a casserole before committing to a huge one - a half recipe (for a 13x9) usually fits in an 8x8 or 9x9 depending on how tall the pans are. That is what I usually do since I am still mostly just cooking for 2.

Landabee, I used to undercook the pasta (ziti) by just a couple of minutes before we switched to using whole wheat (I find it needs to be cooked the full time). I think the biggest difference for me is that I don't use ricotta in the ziti. I just use extra mozzarella and it turns out well. I do either a cheese or a sausage (normally chicken italian style these days) because that is what Mark prefers over a veggie one. I know a lot of people do freeze lasagna, I just never like how mine turns out.

I had to come in and share this...

I had a card waiting for me for Secretary's day. Is it really Secretary's Day? I hate Hallmark Holidays. But, my boss was in my office at 7am to thank me for all my hard work.

Made me glad to be on time. And, I LOVE MY JOB!

And, I am posting this in another thread, oh hosties-with-the-mosties. Because I'm happy.

(ps - the spell check suggest CAM for 7am, mos-ties for mosties and psi for ps. What is a 'mos-ties'?)

My boss created me this morning with a can of mixed nuts for "Administrative Professionals Day" (according the the calendar, we're no longer secretaries OR Admin Assistants... we're now professionals! )because "We're all a little nuts but we're completely nuts about working to serve the Lord!" I thought it was great! I'm sooooooo blessed to get to work full-time in the ministry at my church!

I havent gotten anything, and probably wont. I did get flowers last year, but that was the only time. Thats okay though. Glad ya'll are having good Administrative Professionals Day!!!

Obviously I am coming in a little late on this....but the once a month cooking sounds like a good plan. I've heard of it...just not sure of how it would all work. For starters, I would have to have a bigger freezer. Unless a month's worth of meals will fit in a refrigerator freezer?

On the maid thing---YES--I would SO love to hire a maid...if there were any extra finances. Just doesn't seem to be any. DH & I both pitch in to do what we can. Something I have found helpful is to TRY to come home over my lunch break to do some cleaning (start a load of laundry, wash dishes). Every other Wednesday, I get a one hour lunch break (usually it's just 45 minutes)....but the school schedule is a little different with minimum days.

For today I am enjoying being home....even if it is because I had surgery on Friday. I go back to work on Monday. Hope I'm not too exhausted....

I'll be praying for you as you recover from your surgery!

I've got a woman coming on Monday to look at our house and give us a quote on cleaning every other week. I was given a rough estimate of $75 a month for two hours of work every other week. If that's the case, should work into the budget okay (especially after I cancel my gym membership that I never have time to use). The akward part is going to be that it's a woman I know from church. She is someone that I really trust and I know that she can use the money right now. I guess it will be a pride-swallowing activity for both of us!

I'm trying to start a new tradition with my little ones. Yesterday when I got home from work, I took all three of them and the dog for a walk around the neighborhood. It was amazing how much more my oldest (almost seven years old) talked once I had him away from the tv and all the other craziness in the house. Even my two year old talked more! He was adorable, yelling out the names of everything he saw and knew. "Puppy! Tree! Birdie! Mailbox!" I'm hoping this will serve doubly as quality-time and exercise-time. I'm also hoping that if we get in the habit of doing it as soon as I get home (before dinner and baths and everything else that has to get done in the evenings) we'll stick with it.

Make sure you discuss who provides cleaning supplies and what kinds of things she will do.

Zoebob you should definitely find out if she has an official business or not. If you are making the check out to her personally, if she is using your supplies and equipment, if she is taking direction from you then she could be considered a household employee which has tax implications. As a household employee the homeowner should be paying social security. Also if she damages something in your home or gets injured while in your home the homeowner is responsible for all expenses. I would definitely recommend a cleaning company that carries liability insurance to cover damages and workman's comp to cover theiremployee if they get hurt.

Thanks for praying!!! Your new tradition sounds like fun! My son has started talking up a storm lately...so it seems. Maybe it's just because I've been around him more lately & I didn't notice because I was gone working all of the time. I'm so grateful for the time I've had with him this week without feeling drained/stressed from work. Yes, I have been tired from surgery....but it's a bit different.

I'm late, but I am praying for y'all, Laura.

So, I cooked for the week on Saturday. I was WORN OUT afterwards, but the sense of accomplishment and the ease of the rest of the week were definitely worth it! I can't imagine how you would cook for a whole month in one day, but I guess you get used to it and get more efficient. Mom and I are already planning to do it again this Saturday.
