I had some pork shoulder steaks that had been cooked in a Creole sauce (from a jar that I bought I don't know when!). One less thing in my cupboards . Oh had rice with it and a huge salad.

Cooking italian??? You'll need a bread machine and this recipe:

Garlic Bread

INGREDIENTS
1 3/8 cups water
3 tablespoons olive oil
1 teaspoon minced garlic
4 cups bread flour
3 tablespoons white sugar
2 teaspoons salt
1/4 cup grated Parmesan cheese
1 teaspoon dried basil
1 teaspoon garlic powder
3 tablespoons chopped fresh chives
1 teaspoon coarsely ground black pepper
2 1/2 teaspoons bread machine yeast

DIRECTIONS
Place ingredients in the bread machine pan in the order suggested by the manufacturer.
Select Basic or White Bread cycle, and press Start.


This tastes a lot like the bread at Macaroni grill, though they add Rosemary to their recipe (I don't know how much).

I prefer to eat this break like macaroni grill, so I take a small dish, put fresh ground pepper and olive oil in it, break off the bread and dip it.
Yum.

I needed to revive this thread with a recipe. I had wanted to post one I saw on TV. It was a Mexican chocolate cake with flan topping, but I couldn't find that one. While searching for that, I found one that looks just as good!

No need to inflict bodily pain!

You don't have to use one, but they're really fun. I used to make black bean tamales (on accident the first time. The beans bled through the masa, so after that I just started mixing it all together before forming).

You might be able to pick one up pretty cheap. Do you have any Hispanic grocery stores in the area? (That's an ignorant question upon first read. We have so many here, that it's difficult to imagine your area having any!)

There is a HUGE Mexican population here and a bunch of Mexican groceries in my neighborhood, so I'm sure I could find one. I could pick up all the ingredients there too.

I love to cook. I always plan for left overs for lunch. I usually cook big on Sundays and Tuesdays. I always keep cooked ground beef in the freezer for quick weekday meals. DD lives for spaghetti.

I also make meat loaf muffins. I can freeze and separate when needed. I have found that most anything will freeze.

The crock pot is my friend. I make lots of stuff with it.

That was my original intent, Steve; to mail-order stuff like that.

However, after searching for hours, I found one site that I thought I was absolutely going to love . . . and promptly spend a lot of money ordering all kinds of wonderful things. Sadly, after placing the order, I then learned that their customer services was more than extremely lacking; and I don't do business with companies that provides shoddy customer service. So I'm back to square one in that regard. I was hoping to find a one-stop site where I could order everything food-wise that I wanted and/or needed to. I think I may have to instead find a combination of a few smaller sites.


BTW, remember my black-bean cornbread? The other day, I made it, subbing lite coconut milk for buttermilk or half-n-half. It was really good; and not overly coconutty.

I should spend some time getting caught up in here. Any specific recipes that I should know about?

There's a yummy papaya drink by Adriana back near the front of the thread. I haven't made it yet though.

I think you're really going to like it . . . just remember that the cornbread is going to be purple and not yellow or white. It might be a bit of a shock the first time.

Is that recipe posted in this thread Sharon-Marie? It sounds good, though I don't make cornbread much because it has to be fresh which means I'd have to eat a lot

I was in my local supermarket yesterday (the one where I was produce manager) and bumped into a friend and we talked about whether it had got better or worse since I left ~ she pointed out there were some ethnic they seemed to sell that I hadn't sold ~ I pointed out that most of them I'd introduced before I left! Then I went into the greengrocers a few doors down ~ and their ethnic range is even greater ~ it really is wonderful now to buy there ~ and then there's my little health store which doesn't do too badly

Aga, I'm not sure if I've posted the cornbread recipe anywhere or not.

But for you - here ya go:

1/2 cup blackbean flour
1/2 cup oat flour
1 cup cornmeal
4 teaspoons baking powder
some Celtic Sea salt (about 1/2 teaspoon)
2 eggs
1/4 cup (+scant) olive oil
1 cup (+scant) buttermilk (or) half-n-half (or) coconut milk (I've tried and liked all 3)


Generously oil the muffin tin or baking dish and put in an oven that is preheating to 400*F (204.44*C).
You'll want the oil sizzling hot; this will create a crispy muffin crust.
It's best to use something other than olive oil for this (olive oil has a high smoking point).

Mix dry ingredients together.
Beat wet ingredients into dry.

Pour batter into muffin tin or baking dish and bake for around 12-15 minutes

Thanks Sharon-Marie... I see it has black bean flour, I've never seen that (and I've seen a lot of flour!)... is it just ground up black beans? I can do that if it is...

I use rice bran oil for a lot of cooking (has a higher smoke point than olive oil, is cheaper and doesn't add flavour to food ~ and is still good for ya!).

Aga, it is just ground up black beans. Although, I don't know if the beans are cooked are left dried before grinding them. I imagine they are ground dried.

What do you think?

(Maybe I should try some with my coffee grinder and see what happens).


I'll hafta check out the rice bran oil.

I forgot to mention . . . I use both "full-flavor" extra virgin olive oil" and "lite" extra virgin olive oil. The "lite" denotes the lack of olive flavor (as well as coloring) . . . not "lite" as in low-cal, etc.
