One if my fave meals to cook that is quick and simple (plus the kids love it when I have them). Items needed: Frozen Meatballs (italian or homestyle, either works) Package of Brown Gravy Instant Potatoes (or any other style Mashed Potatoes) Make your gravy by follwing the directions. Then add your meatballs (frozen or you can preheat them in the microwave, depending how much of a hurry you are in) and let them simmer till they are done. Serve with Mashed Potatoes or Rice if you'd like. I usually serve it with Corn also, but thats my personal preference. You can make as much or as little as you need. For long days you can start it in the crock pot before you go to work.

I was going through my saved recipes that I haven't looked at in a while and found this one.. I will substitute the beef with something else, and probably the zucchini too, since I'm not too fond of that. Maybe sub Artichoke for the zucchini. Greek-Style Stuffed Peppers -------- ------------ -------------------------------- 1 pound lean ground beef 10 ounces frozen chopped spinach -- thawed and squeezed dry 1 medium zucchini -- coarsely grated (about 2 cups) 1 small onion -- minced (about 1 cup) 1/2 cup bulghur 1 egg -- lightly beaten 1/2 teaspoon dried oregano 1/2 teaspoon salt Freshly ground black pepper 3 red bell peppers -- halved lengthwise, cores and ribs removed 29 ounces stewed tomatoes -- (2 cans) finely chopped 1/3 cup crumbled feta cheese Preheat the oven to 350 degrees F. In a large bowl combine the beef, spinach, zucchini, onion, bulghur, egg, oregano, salt and a few grinds of pepper. Mix until thoroughly combined. Arrange the pepper halves cut side up in a 9 by 13-inch baking dish and fill each pepper half with the meat mixture. Pour the tomatoes over the peppers and sprinkle with the feta cheese. Cover with foil and bake for 30 minutes. Uncover and bake until the meat mixture is completely cooked and the peppers are tender, about 45 minutes longer.

Hey, Steve! That looks delish! What will you substitute the meat with? Yesterday, mom and I made one of my favorite dishes. Can't remember the name of it, but it's a pasta dish. You boil about 1/3 box of whole wheat linguini with red bell pepper and asparagus tips - drain. Then saute 1/2 lb of frozen shrimp in oil & garlic, then add white wine (I don't care for the taste in this dish, so I use chicken broth). Pour off excess liquid, toss with pasta, then toss with about 1/2 jar of Pesto. Serve warm. This makes enough for lunch the next day.

I can take green peppers in small doses, but red peppers (and yellow and orange, also) are just so fun. Apparently, I'm on a red pepper kick, as lately, I have been putting them in practically everything I eat (except my fruit smoothies).

Have you ever tried the jars of roasted bell peppers! Yummmm! They're so easy to throw into a dish and add some extra flavor, though the texture is a little "off" (I like 'em on the tender-crisp side). I like yellow and orange too, but the red is more abundant in the stores. Once I got a taste for the red, I just didn't use the green very much, except when making fajitas.

I've enjoyed a great treat the past few nights. I opened a tub of blackberries, washed them, poured them in a bowl, and popped them one at a time into my mouth. They were delicious!

They were delicious! Blackberries are delicious. But they were designed to be made into cobbler. Just like raspberries were designed to be made into jam. If enough of them survive the picking process. (One for the bucket, one for me.One for the bucket to for me, Hey that one in the bucket is bruised. I had better eat it so it doesn't ruin the others...)

I have a good chicken recipe, since every1 loves chicken. yes i do make this myself, and it will be worth it,and is pretty easy to do. Stuffed chicken marsala you need 4-6 breasts 1/2 cup of marsala wine 2 cups chicken stock mushrooms sliced(as much as you like) flour salt and pepper oil(i prefer olive oil) prosciutto sliced fontina cheese sliced a little heavy cream-maybe 1/2 cup cut breast and stuff with prosciutto and fontina, dredge in flour and fry it up. take breasts out, add shrooms, fry them up and add marsala, let cook for a few minutes, add stock, put breast back in. cook for 5-10 minutes depending on thickness of breats, then remove once more and add cream, you can then put the chicken back in or pour sauce over the top of them. I usually heat it through in the sauce. this goes great with fried asparagus spears, make sure if they are not fresh to drain really well, dip in egg, and then seasoned bread crumbs, and fry them up. and roasted garlic mashed potatoes you can make your own potatoes, or buy instant which is easier. to make your own peel pot, add to cold salted water, and bring to boil, let simmer for 10 -15 mins, or fork tender. drain, mash up, add butter and milk or cream, and salt and pepper to taste, don't over mash, add roasted garlic and mix it up. to make roasted garlic get 2-3 heads of garlic and cut in half( the whole head), heat oven to 450, put garlic in pan and drizzle with olive oil, salt and pepper, and bake for 35-40 mins, it will be soft and golden. you can squeeze it out like toothpaste, and mash it up with a fork. i hope everyone likes it if you try it. it may look difficult but it is not. I have 1 for stuffed eggplant which is awesome, but i will post another time. God bless all

White Northern beans would be a good replacement for the beef or even barley, but then I would delete the bulger. I would also add garlic. This sounds really good. I've only got three and only one is doing well (I'm hoping the other two will recover this year). I'd like to get a spot where I can properly propagate them. They are a very good tasting variety (Black raspberries!)

I tried making raspberry jam once. It turned out pretty tasty, but it was a lot of work preparing the jars, boiling, etc. But it's like a taste of summer that you can spread on your toast all winter.
