I love having a freezer. I make up batches of different foods and can freezer quite a bit of it for the future. Don't always freezer the whole dish (like moussaka) because I don't like the aubergine nor topping once it's been frozen, but I freeze the meat part and it makes it easier for me later. I nearly always have batches of soups in the freezer and am starting to cook and freeze batches of beans (works out cheaper than buying tins).

It's not exactly cooking for one as I've got the Girl but we do a lot of pancakes on Sat morning. Ib ought a new griddle this year as we wore the last one out (and it will work nicely for the GT!) Should be able to do 9 pancakes at a time.

I've got an 8 cup pyrex mixing bowl that I use as my "pourer". That and a soft rubber spatula and I get the perfect pancakes. Lathered down with butter and real maple syrup and kiss teh diet goodbye for a few minutes. Yum Yum.

There's a company that delivers to teh Girl's school called Market Day. They have Chicken Cordon Bleu in individually wrapped portions. Just slap one on a cookie sheet and bake for 20 minutes or so. Magnifique!

(Notice how all the other cooks are adding spices and sauces and such? You probably won't see that from me. Slapping it on a cookie sheet and baking is about the limits of my kitchen talent. Except for handcarving cookies)

Over the years I have acquired a nice selection of cook book. When I get the urge for something new I look thru them to find something.

No, it isn't smoked. Just plain. I mixed up a bit of dill and lemon juice and covered it in that before baking. I tried the lemon and dill mixture on some walleye I had a week ago and I really liked it so tried it on the salmon....it was wonderful!

Me too! I am very weird in that I love cook books and recipes but hardly use them. On top of having all the cook books I have a very full recipe box that is all nicely organized and then I have two big tins that are crammed full of recipes that I've either clipped from something or written on a scrap piece of paper. Oh...and my sister gave me a cd that is titled One Million Recipes. Actually I use that very often. What I love about the cd is if I have something that I want to try and do something different with it I can do a search and just put that ingredient and come up with tons of ideas of what I can do with it.

You guys are making me hungry. MMmmm I love salmon. I'll have to try it with the garlic and Rosemary(not much into dill though). I usually top mine with mango salsa from Costco. Yummy!

Oh yeah...mango salsa would be wonderful on fish. I tried the fruit salsa that Schwan's has and it was okay....but I love the peach/mango &pineapple salsa from WalMart and that would probably be better...and much cheaper.

Your welcome! We eat fish once a week too. We only eat meat 3 times a week 1 chicken, one red meat and one fish. My kids like fish, however if it is a little fishy they don't want to eat it. I read somewhere that if you poach it in vermoth and lime or lemon before you grill or broil it it takes away the fishiness. It actually does work. Now I miss the flavor, if I don't do it.LOL

I'm with your kids on that one, Nadine....I don't like fishy fish. I tend to like the milder ones. My favorite is the White fish you can get here in the Great Lakes. Next week I'm going to try tilapia...never had it before but it's on sale so figured it's a good time to try it out.

My family celebrated my birthday tonight (a week and a few days later). I got to cook dinner. [:D] As I was cooking, I thought about how much I love having people over and feeding them.

How does this apply to this thread? We don't always have to cook for one. We can invite friends and loved ones over for fellowship and cook for them.

I don't cook for just one, but three of us and on the weekends I usually go all out. I make a killer lasagna that I use both ground beef and ground sausage with. I also make banana pancakes that go over real well. I bought a new griddle recently for Bible study and I looooove it. I can cook an entire batch of pancakes in less than 10 minutes. It's great. *grin*

There have been times I have too zealous in my cooking and had to call over some friends to help us eat it all. [8|]

My favourite quick thing to make is tacos. We always have sour cream, salsa, and cheese in the house for various reasons. I just brown the meat, add the seasoning, and the boys and I dine on that for a few days. Very yummy. I also use a lot of Pampered Chef recipes for snacks. I make the touchdown taco dip and the boys looove it. Mix sour cream, cream cheese and taco seasoning. Then layer a baking pan with refried beans, the sour cream stuff, and cheese and then bake until the cheese is melted. Add tortilla chips or veggie slices and yum! *grin*

Someone got me hooked on a really yummy peaches and whiskey sauce that I have taken to spreading on my chicken. I grill a few breasts that way on my George Foreman grill, add steamed veggies and macaroni and cheese (LOL!!!) and there you go. A yummy dinner for three! [:)]

Alcohol is used in many fine culinary traditions. Perhaps it is because it helps to tenderize the food?
