Does anyone have a good, tried and true, recipe for Salsa from fresh ingredients? I used to have a recipe where you cooked the tomatoes, removed the skins, added a few other ingredients, then put it all in the blender. It was from a friend who was from Mexico, and now I've lost contact with her. [:(]

I've got a really good cabbage salsa recipe, but I'm thinking you're probably wanting regular salsa? If you're interested in the cabbage salsa, just let me know. I did have a wonderful fresh salsa recipe but I lost it somewhere in my move from Nevada.

What can you use the Cabbage Salsa with? That sounds interesting...

Actually, I am looking for a tomato and jalapeno-based salsa from fresh ingredients... most of the recipes I find online are from canned ingredients.

I just looked on my recipe cd and found this.....I dont' think it's the exact as the one I've used before but if it's not I think it's awfully close. And of course depending on how hot you want it depends on how much you seed the peppers. I'm a wimp so I pretty much scrape it clean. [:D]

1 c. diced tomatoes
2 tbsp. chopped fresh cilantro
1 tbsp. minced onion
1 tbsp. fresh lime juice
1 jalapeno chili, seeded & minced
1/4 tsp. salt

Mix well and enjoy on anything. *Can be made hotter by using 2 jalapenos. (or leaving more seeds in the chili pepper affects the heat, too)

The cabbage salsa is wonderful on tortilla chips. I'll go hunt it down and post it and see what you think.

Alright, GnM....you helped me to unpack a box. (and I won't mention that I've now been here for one year and am just now unpacking the box with most of my cook books and recipes.)

And I found the cabbage salsa AND I found the other salsa recipe I mentioned that I really love and thought I lost. So...thanks GnM!

Cabbage Salsa:

8 plum tomatoes, diced into small pieces
1/2 red onion, diced
3 Tablespoons chopped fresh cilantro
1/2 head red or green cabbage, cut into small pieces
1 clove garlic, minced
1 jalapeno pepper, diced
the juice from two squeezed limes
1 teaspoon salt
1/2 teaspoon sugar

Again, you can control the heat by adjusting the amount of the peppers and also by how much of the seeds you remove

chill for a couple hours

okay...and here's the one salsa recipe that I've used a lot and really like. It's very similar to the first one I posted but this one has garlic

Fresh Salsa:

2 medium ripe tomatoes, diced
1/4 medium onion, diced
4 sprigs cilantro
2 cloves of garlic
1 tsp garlic salt
2 Tbs lemon juice
1 jalapeno (1/3 for mild, 2/3 for medium, all for hot)

Do you cook either of the recipes? The cabbage salsa actually looks really good!

wfisaac -> RE: Cooking for One - The Singles Food Thread (10/26/2009 8:41:23 PM)

No, I don't cook either one. Just chop and slice and squeeze and mix altogether and let chill for a while and then yummy. I much prefer salsas that haven't been cooked.

jhuperetes -> RE: Cooking for One - The Singles Food Thread (10/26/2009 8:43:01 PM)

I add marinates to meats I plan to freeze.

Simplest one would be some salad dressings like vinaigrette, Italian, but just garlic salt will do.

Even when the meat is frozen, the flavors are seeping into the meat, breaking down the tissue. When you move the bag to defrost it - the marinating completes.

I'll throw some ham and chopped bell peppers or burger into Mac & cheeze to stretch it out further.
Like a lot of people I get real tired of trying to think of what to cook all the time so if I do get something out I try to get something that can be stretched out over several meals.

Also, if you are one that likes fruit in their salsa, you can chop up a mango and add it to the Fresh Salsa recipe. I used to think fruit in salsa sounded nasty...and then I tried it....I like!

jhuperetes -> RE: Cooking for One - The Singles Food Thread (10/26/2009 8:52:37 PM)

Peaches will do in a pinch too, instead of mangoes.

Y'know, that's something I've always wanted to try. It sounds more like a fruit salad, but that's ok since I like fruit salad. [:D]

My house smells wonderful. [:D] Just made some homemade granola with Orange blossom Honey... I should make this every day instead of my scented candles. [8D]
