Alright, GnM....you helped me to unpack a box. (and I won't mention that I've now been here for one year and am just now unpacking the box with most of my cook books and recipes.) And I found the cabbage salsa AND I found the other salsa recipe I mentioned that I really love and thought I lost. So...thanks GnM! Cabbage Salsa: 8 plum tomatoes, diced into small pieces 1/2 red onion, diced 3 Tablespoons chopped fresh cilantro 1/2 head red or green cabbage, cut into small pieces 1 clove garlic, minced 1 jalapeno pepper, diced the juice from two squeezed limes 1 teaspoon salt 1/2 teaspoon sugar Again, you can control the heat by adjusting the amount of the peppers and also by how much of the seeds you remove chill for a couple hours okay...and here's the one salsa recipe that I've used a lot and really like. It's very similar to the first one I posted but this one has garlic Fresh Salsa: 2 medium ripe tomatoes, diced 1/4 medium onion, diced 4 sprigs cilantro 2 cloves of garlic 1 tsp garlic salt 2 Tbs lemon juice 1 jalapeno (1/3 for mild, 2/3 for medium, all for hot)

No, I don't cook either one. Just chop and slice and squeeze and mix altogether and let chill for a while and then yummy. I much prefer salsas that haven't been cooked.

I add marinates to meats I plan to freeze. Simplest one would be some salad dressings like vinaigrette, Italian, but just garlic salt will do. Even when the meat is frozen, the flavors are seeping into the meat, breaking down the tissue. When you move the bag to defrost it - the marinating completes. quote:
ORIGINAL: ajlewis I'll throw some ham and chopped bell peppers or burger into Mac & cheeze to stretch it out further. Like a lot of people I get real tired of trying to think of what to cook all the time so if I do get something out I try to get something that can be stretched out over several meals.

I used to think fruit in salsa sounded nasty...and then I tried it....I like!

Peaches will do in a pinch too, instead of mangoes.

It sounds more like a fruit salad, but that's ok since I like fruit salad.
