Come to think of it, peanut butter pancakes sound delish!

Here you go Shema, I don't remember where I got this but the kids love them. I'm not really into PB myself.[:D]

Peanut Butter Pancakes

1 cup Flour (I use 1/2 cup white and 1/2 cup whole wheat)
2T Brown Sugar
2T Baking Powder
1/2 tsp. Salt
1 egg beaten
1 cup milk (I use buttermilk and omit the baking powder sometimes)
1 Tbsp. cooking oil
1/3 cup peanut butter (creamy or crunchy)

Combine Wet ingred. in a small bowl, Combine dry ingred. in a large bowl. Add wet ingred. to Dry ones and blend until fully combined, but don't over mix. Use pan that is sprayed lightly with pam. (If you use self rising flour omit baking powder and cut salt in half.)
I serve them with vanilla yogurt and preserves.

Note: to keep it on topic...if you are cooking for one or two these freeze well. I make them into mini pancakes so my kids just pick them up and dip them.

Edited to include : Quite the Hot thread...look we are on page 5!

I also do quite a bit of shopping on-line but mostly for herbs and spices that I use a lot of. The first time I ever used fresh ground pepper or cinnamon, I never could go back to the preground, prepackaged stuff.
I get the things I use the most, like peppercorns, dry minced onion or seasoned salt from a mail order spice company called Penzey's. I also use a product called Real Salt. It's salt that has been mined out of the ground instead of being manufactured in a processing plant somewhere. The anti-caking agents, iodide and chemicals used to bleach it a pretty sparkling white have been left out. So it has a much saltier taste and therefore I use less. This is a huge benefit since I have high blood pressure.

Sea salt is good like that too, not to mention it's healthier than regular salt anyway, AND it's saltier so you use less. Since I switched to sea salt I loathe having to use regular salt now...so do the monsters. [:D]

Butter is another thing. How long does it last in the fridge? I'm lucky if I use one stick a year, but you can't buy just one and you end up wasting the rest. Can it be frozen?

Butter stays a remarkably long time in the fridge. Spoilage is not as much of a problem as it soaking up the smells/tatses of other foods. It is very easily frozen and thawed with no loss of taste or texture.

In fact during the winter months I leave on stick in a sealed container on the counter in the kitchen so it doesn't get too hard to use. Never had a stick go bad yet.

Butter is a miracle food. (and taste so good on pancakes too)

Staying on topic, how long can meals stay in the fridge before they go bad? I have an issue with food that's more than a couple of days old. As a single, this often presents a problem.

If they aren't green, or fuzzy, or smelling bad, they're good. My problem is by the time I get around to eating the leftovers I don't want them anymore.

Not necessarily. Food begins to collect bacteria after about 2 hours of being out. Now, most of that bacteria won't hurt us, but sometimes it does. I have a 3-day rule for left-overs, though I have been known to go over that by a bit (sometimes I pay for it, though). I do have a lot of leftovers go bad. If we put leftovers in the freezer, though, we won't have that problem.

FunBetty -> RE: Cooking for One - The Singles Food Thread (3/18/2008 3:11:09 PM)

jumping in here... when I cook for myself, I usually cook enough for two servings: one for dinner and one for the next day's lunch.

usually I'll take some chicken breasts out of the freezer and find creative ways to prepare it.

One of my favorites is sauteeing the chicken in a little olive oil, chop a tomato and sautee them in the pan, add garlic, and whatever spices - oregano, basil, etc. and then when I am done I toss some mozzarella cheese to melt on top. almost chicken parmesan but a little healthier.

other times I just get plain experimental. if it doesn't work I can always hop in my car and go grab some food somewhere.

oh...and totally love making breakfast for dinner. French toast is my favorite.

I must have a cast iron stomach then. I once made turkey soup from the leftovers at thanksgiving (from scratch thank you veyr much) and ate on it until February. M was done with it about a week after t-day. It was soooo good. And sinceit was reheated all the time it stayed good.

Grace-N-Mercy -> RE: Cooking for One - The Singles Food Thread (3/18/2008 3:21:58 PM)

You must! I'm impressed. [:D] Maybe things just don't last as long down here in Florida.

Does this mean I shouldn't eat my Granny Smith apples? :)

Normally green IS an unnatural color for food. But to every rule there is an exception. I think you're safe to eat those apples. Better smother them in caramel though. caramel kills germs (or so I've been told)

shawke -> RE: Cooking for One - The Singles Food Thread (3/18/2008 4:54:12 PM)

Strudel kills germs on apples too.

Oh, I just bought a bag of French toast flavored bagels. They really taste like French toast! YUMM!

I buy all my herbs and spices from my local health store ~ it means I can buy in small amounts so they're always fresh[:D] And I can carry those[;)]

I'm suprised it wasn't walking out the fridge after more than 2 months! Not only is it not generally a good idea to keep food that long, constant reheating isn't that good either.

Oh no! I hope I dont' see these...they could mean trouble. I love bagels and I love French toast...I'm sure if I found those I would cave on my staying away from bread right now. sigh

Caramel apples = yummy!
However, you should only put caramel on the Red Delicious variety. No need to spoil a perfectly good Granny.

Why are many vegetables green if green's an unnatural color for food?

I agree. no matter how much caramel yo put on granny she'll still taste of liniment. Niot to mention it gets her really upset. And you DO NOT want to see my granny upset (shudders)

Were they thrown out at first or second? Tried to steal and got caught? maybe a force out?
