If it's intimacy with God, then I'd say the Ragamuffin Gospel speaks about our love and grace relationship with God.

Sacred Romance is very good. I'm reading it now and am about 1/4 through.

I have an older book by Amy Carmichael (a missionary in the early 20th century in India) who wrote some beautiful things about our intimacy with Christ. I recommend that, only can't remember the title of the book right now and can't look it up as all my books are in storage. I'll try and remember though.

If you mean husband/wife intimacy, Intimacy Ignited by Pintus and Dillow (2 husband/wife pairs). It is a line by line study of the Song of Solomon.

I love Brother Lawrence's books! I also really like the writings by Saint Thomas Aquinas though they are a bit more difficult to read as they're written in an older english.

There is an individual who has taken some of the classic writings and has recast them in contemporary language. Look for them at places such as CBD.

The Joy of Sex and Everything You Always Wanted to Know About Sex (But Were Afraid to Ask) are both exceptional texts regarding intimacy between spouses.

Also, The Celebration of Sex by Douglas Rosenau is a good read.
