How simply logical! I can't believe I never noticed that. Kimmie- have you thought of meatball dishes? I don't have recipes because I've never made most of these, but you could do greek style meatballs, swedish meatballs, meatball sandwiches, or porcupines.

This is a favorite in my house: http://allrecipes.com/Recipe/Spicy-Black-Bean-Empanadas/Detail.aspx I don't use the ground pork. It is either ground beef or ground turkey.

My meatballs are the same recipe as my meatloaf except I fry the balls in a pan. You could have meatball sandwiches. Sometimes, it tastes good to add a little italian sausage to the ground beef when making meatballs too.

You could also do enchiladas, we love those. We usually use chicken, but you could definitely do beef. Here is the the recipe I use for the chicken enchiladas and I sure substituting 1lb. of ground beef for the chicken would work.

Here's one our family really goes for. It's quick and easy. PIZZA BURGERS. Frie your hamburger with salt , pepper, onion powder, and garlic powder. When you hamburger is done put it on a plate and smother it with your favorite canned Pizza Sauce. Add shreaded Motszerella cheese and put it in the microwave until the cheese melts, about 15 to 20 seconds. It's ready to serve. Spiritchsr1

That reminds me that when I make pizza, I use ground beef as my meat instead of sausage or pepperoni. When I brown the beef, I mix in minced onion (small enough to disappear when it is cooked,) garlic, and italian spices. Then I drain it and sprinkle it on the pizza just like you would italian sausage.

If you make a large batch of the Rachael Ray's chili recipe that Yolanda posted, I thought of an idea for that. Last night I made the yummiest thing, probably really bad for you though. It was a tatertot chili hotdog cheese casserole. You bake the frozen tatertots according to their directions, but fill your baking dish with them all packed together in one layer. Re-heat your chili in the nuker while you're baking. When the taters are about 4 minutes from being done, put a layer of sliced hotdogs on top of them then continue baking until the taters are done. Then put the oven on broil to fully cook the hotdogs, then put the chili on top of that and some grated cheese and stick back in the oven on broil until the cheese is melted and crispy. It was soooo yummy and big hit with my 2.5 year old. You could even sneak some veggies in there I bet and no one would notice. My friend made a different kind of tatertot casserole with just ground beef. I don't know the recipe, but she baked the tatertots first then put some cooked seasoned ground beef on top and some veggies like corn and peas and onions then she melted cheese on top. It was good.

That chili recipe that I posted at the beginning has next to no veggies in it, but when I made it, I added a ton of veggies to it...carrots, celery, green onions, green peppers, I think I even grated or chopped a zuccini in there. Christina, that recipe sounds awesome...I want to try it. Tater tots are super hard to find around here though :(

ORIGINAL: agapetos Roberta... your 'shepherds pie'... it's cottage pie ~ shepherd's pie is made with lamb I guess that depends on what side of the pond you're on. Us folks on the poor side of the pond can't afford lamb. LOL... what a dish is called has nothing to do with whether one can afford the meat or not! Shepherds do not take care of cows so shepherd's pie cant be made with beef! Hey there Agape, I live in Wyoming and let me tell you, no Shepherd in his right mind would try to 'herd' the range moos we have here!!!! When I was doing a lot better a few years ago, I and a friend hunted over Togatee way (near Yellowstone) and on my way back to camp, I came across a herd of Range Moos. Now, having been raised around livestock for most of my life (I live in the Oil Patch now, which is Open Range), let me say as soon as I came around the bend, I stopped stock still and judge the Sitch. It didn't look good; about 30-35 head with some more over the side of the dirt road, down in a gully. I had near straightup hills on my left, and the gully on my right, which was wide with a rise on the far side that had a browhill on it. I'd hunted the browhill nose all the way back up to our camp the day before, so I knew where it went: easy walking too. Not knowing how many more Range Moos were still in the gully, I was still considering it, when the Lead Cow made the decision for me. I was still about a 100 yards behind the small herd of cattle, but after she spied me, that was it. She began 'moo'ing' in a 'black bear' manner, more of a deep, low, low, grunting, that conveyed a real sense of rage. All the while she increased the volume, as she moved directly toward me; two or three of her associates started to move with her My knees weren't happy with me at that point in time, but I shrugged that off and made like a monkey on tree, with a really hacked adversay on my tail. I climbed on all four for a ways, until the angle finally eased up and I could get up on my feet. I stood there sweating like my thumbnail picture, knees aching horribly, trying to get my breath (we were hunting at about 7000ft-10,000ft, depending on which trails you took and how far you went, the hill side was closer to the 7000ft elevation), and there some fifty yards below me, was Herself with her Attendant Ladies, looking up at me and still giving me the 'What for'. I thought it couldn't get any worse, but when I crested the rise, there before me were a series of several more UP and DOWNS, with the ravines all leading to the road. Which would have been fine, had Herself not decided to keep moving the herd in the same direction I was going-so, no taking the easy way through the ravines to the road. Making a long travail less painful, I finally covered all the hills and ravines, saw the Range Moos finally drift off into some good looking grass, and I eventually made it down to camp. My knees were not pleased with me, so they didn't let me hunt the next day. Range Moos have to contend with blackies (black bears), cougars (mountain lions), coyotes (small wolves) and Grizz (Grizzly bears). Now that the mindless Eco-Fascists have had their way, the Range Moos must also now contend with real, live, timber wolves. Considering what's out there and wants to eat them, it's no wonder they carry a Big Tude to stay alive. Range Cattle have been known to charge a cowboy on horse and knock them over, sometimes goring the horse to death and trampling the cowboy. I must admit though, Range Moos make some of the MOST tender steaks, roasts, and stew meats, I've ever eaten; grass fed beef, is in my estimation, far superior to corn fed beef. But then, I may be biased: I have a mountain of respect for the Range Moo, and I've crossed a few to prove it. Cheers.

Meat and Potatoes Casserole Peel and thickly slice 4 - 5 large potatoes. Boil potatoes until barely starting to get tender. Gently drain and cool. Layer potatoes with browned ground beef (about a pound) and seasonings of choice. I also like to add a chopped onion, bell pepper if you like it. Top final layer with two cans cream soup mixed with milk to thin. Bake at 350 until bubbly, top with cheese if desired. Campfire Hobos This was originally something hubby taught me that they would put together in foil pouches and cook while camping, but now I make it in a casserole dish and add liquid smoke to give it a campfire taste. Evenly slice some carrots and potatoes, put into bottom of casserole dish. Sprinkle with salt and pepper. Make out medium thickness hamburger patties and lay over top; salt and pepper patties. Top with thinly sliced onion. Sprinkle with worchestershire sauce and a little liquid smoke if desired. Cover tightly with foil and bake at 350 until meat is done and veggies are tender. (The veggies soak up the drippings from the meat, so make sure you use meat with a little bit of fat in it, but not too much.)

Garden Variety Casserole "It's like salad... but hot... with meat... mmmmm meat" (serves 3) Boil any pasta (4 handfuls) Brown ground beef (1/2 pound) In the microwave (I use a 2 cup glass measure) mix & boil until thick: > 1 beef bullion cube > 1 tbsp Worcestershire sauce > 1 tbsp cornstarch > About a 1/2 cup of water Stir together in casserole dish with: > 1 small can plain diced tomatoes with juice (or fresh tomatoes, diced) > 1/2 cup frozen spinach, thawed (or up to 3 cups of any other edible green, fresh) > Optional: celery, green onion, peppers, grated carrot... you name it (if you use tougher veggies, allow them to cook with the beef a little while after it is brown) > 1/2 to 1 cup ranch dressing Top with cheese and sprinkle with garlic salt if desired Bake until heated through and crisp on top ETA: croutons are also a good salad-like topping
