As I was pulling weeds today, I got to thinking about dandelion greens.

Do any of you harvest yours and eat them?

Any recipes or tips? [;)]

I haven't harvested them myself, but my Italian Grandma used to cook them a bit, (like spinach) in the frying pan and then crack a few eggs over them for a tasty omelet. You can use butter for frying and whatever spice you like such as garlic salt.

My Irish grandparents use to do this as well! During many a lean season, grandma would collect the greens and fry them up with eggs from their chickens.

Dandilion is soooo very good for you. It acts as a tonic for the liver, I think and it helps with excess water weight. My gramma used to take the stems and put it into a creamy sauce to eat. I only had it once, but I want to try it. I mean, come on, with the price of food and it's all over my yard....why not?

Here are a few recipes. Haven't looked over them all, but it's worth a perusal....
