We often talk about the carnal mind being depraved but I have not seen or heard much about the traits and drives of the carnal mind.

There are some Christians that believe the carnal mind has been completely removed from them and no longer affects their thoughts and ways. The carnal mind is extremely cunning, a professional at deceiving.
It is similar to what they say about Satan: His best lie is that he doesn't exist.

But the topic is the "forbidden fruit," the knowledge of good and evil. Is this knowledge a curse? Is it part of the functioning of the carnal mind and not the mind of the born again?

Yes the knowledge of good and evil is a curse. When mixed with the animal nature of creating pecking orders, it allows people to view themselves as above others, to hate others, to pass judgement on others and murder their rivals.
All Things that are forbidden to mankind by the Lord of this planet.

Interesting question. I find it kind of hard to believe it's "carnal", though...as God obviously has the ultimate knowledge of good and evil.
