We always just make shortbread in individual cookies. Gently form a ball, smash it onto the cookie pan. Voila! Little round shortbreads.

Exactly... shortening for softness; butter for crispiness.

Also, keeping them in Tupperware or similar types of containers keeps moisture in there w/ them.



In the past we've made date-nut balls, rum balls , apricot squares, butter riches (these are a more buttery, brown-sugary tasting cookie that you roll and flatten), molasses cookies, pepperkakor cookies, Hello Dollies (or Magic Cookies -- it's another chocolate + nuts + coconut bar cookie), pecan tassies (mini pecan pies, basically), sugar cookies, and other goodies I cannot remember off the top of my head. * melted butter or margarine
* flour
* sugar
* vanilla extract

Mix. Form into small balls. Bake. Then cool.

Toss the baked cookies while still warm (but not piping hot) in confectioner's sugar.

You can add walnuts or pecans or mini chocolate chips.

The cookies are crumbly/flaky, not really crunchy or chewy. They're like a softer version of shortbread.... sorta.
And these are WAY better than the Danish Wedding Cookies by Keebler.

Oh YES. My sister makes these (with chopped pecans) every year for the holidays. WE LOVE THEM. They are FABULOUS.

And I WANT SOME RIGHT NOW.

I have made something that is fun. Take 2 Ritz crackers and put peanut butter between them. Put some chocolate chips in a pan on low heat to melt them. Keep stirring them until they are melted. You can use the microwave but I like the stove top better. Dip the crackers w/peanut butter in the chocolate until they are all coated. Now here is the fun part. Sprinkles, colored sugar, anything you want to use to decorate them. Ask people what they are eating and they won't know, but they will love it. It's easy, a little messy but fun, especailly for the kidlettes.


I'm going to try that Ritz cracker thing. That sounds good and fun.

2 1/2 cup flour
2 sticks softened butter
1/2 cup powdered sugar
1 cup chopped nuts
Cream butter and flour, blend sugar--add nuts Form into walnut size balls Bake 350 12-15 mincool slightly then roll in powdered sugar.. 4-5 dozen

Gluten-free Peanut Butter Cookies

1 Cup Peanut Butter
1 Cup Sugar
1 Egg

Mix everything together, and bake at 350 for 12-14 minutes.

As a warning, it's best to let the cookies cool on the cookie sheet- otherwise they'll fall apart for the impatient people. After they cool they're fine.

Also, these cookies are RICH, so drink with milk for the best effect!
